The Nordic Baking Book is my latest book and a continuation to the documentary project started with The Nordic Cookbook where I wanted to chronicle what Nordic food culture actually looks like today and why. Baked goods and foods made from grains are very important parts of Nordic food culture and have been so for a very long time. Where the Nordic cookbook just touched upon this subject, (including only 120 or so baking recipes due to space constraints) this book goes deeper with about 450 recipes and a significant amount of narrative text to put those recipes in context. It also turned out that it was very difficult to draw a line as to what baking actually is, so in the end I choose to include most foods based on grains plus a chapter with recipes for jams, preserves and cordials. Not because they necessarily belong in a book about baking, but because I felt like including them.
The Nordic baking book is also the first book I have photographed entirely on my own, both the documentary bits and the food shots.
