This is a book which has nothing to do with the restaurant at Fäviken and recipes cooked there at all, but which is still at the base of everything I do in my professional life. A big part of who I am as a creative person and what Fäviken Magasinet serves as a contemporary Nordic restaurant is based on deep research into Nordic food culture, both present and historic. The Nordic Cookbook is the result of a documentary project where I set out to understand what people in my home region actually eat and why. With this book I try to really explain through recipes and narrative text how all of the different parts of this vast region belong together, but also how they are often very different from each other. The book was written by myself after three years of collecting recipes and interviewing people from all parts of the Nordic region. The dishes where cooked by me and photographed by Erik Olsson whilst all the documentary photography was shot by myself as part of the research trips around the region.
